研究活動の紹介 | 1 魚介類の品質変化に関する研究:輸送や保蔵にともなう魚介類の様々な品質変化のメカニズムを解明する。 あわせて、 魚介類の品質評価指標を策定する。 2 魚介類のコラーゲンに関する研究:コラーゲンやコラーゲンを修飾する生体内因子の構造や特性を明らかにし、なぜ魚介類の肉質は柔らかくて死後変化が速やかであるのかなど、それらの特徴との関連を明らかにする。 3 クラゲ類や海藻類等の海洋低・未利用資源生物の有効利用に関する研究:含有される生理活性物質を精製するとともにその性状を解明し、利用に結びつける。 |
