Protein Sciences (Applied Biochemistry Section)

Our laboratory researches the structural analysis and functional modification of enzymes used in various fields such as food, pharmaceuticals, and chemicals. For example, we work with a cheesemaker to develop flavorful cheese by utilizing selected probiotics, Lactoplantibacillus bacteria, to activate an enzyme that curdles milk at room temperature.
